Brussels Sprouts Harvest Bowl

I was craving another harvest bowl similar to my Thai Peanut bowl, but without the Thai this time! I’ve been on a brussels sprouts frenzy since November, so I figured i’d dedicate this bowl to crispy brussels sprouts!

I recently tried Daily Harvest and have been craving “Harvest Bowls” ever since! I tried their Brussels Sprouts and Tahini bowl and it was delicious! In other words, I was inspired by Daily Harvest to create more vegetarian bowls. I try to incorporate protein (chickpeas) when I can; however, the thought of Tofu freaks me out.

I’m always open to ideas for adding protein into my recipes! I ended up adding my Banza Mac ‘n “Cheese” to add a little extra protein and flavor as well. This harvest bowl was perfect for a warm lunch or dinner, and it kept me satisfied for the rest of the day!

A cauliflower rice harvest bowl with roasted chickpeas and crispy brussels sprouts.

Ingredients
Cauliflower Rice
  • 1 Head Cauliflower
  • 1 Tbsp Garlic minced
  • 1/4 tsp Salt optional
  • Pinch Ground Pepper
  • 3 Tbsp Olive Oil
  • Sprinkle Sesame Seeds for garnishing optional
Chickpeas
  • 1 can Chickpeas Garbanzo rinsed
  • Dash Garlic powder
  • Dash Tumeric
  • Pinch Ground Pepper
  • 2 1/2 Tbsp olive oil
Brussels Sprouts
  • 1 Bag Brussels Sprouts about 1.5-2 cups
  • Sprinkle Turmeric
  • Pinch Garlic Powder
  • Pinch Ground Pepper
  • Pinch Salt
  • 1 Tbsp Garlic minced
  • 3 Tbsp Olive Oil
Cheese-less Cheese Sauce
  • 1 cup Cashews boiled
  • 1/4-1/3 cup Vegetable Broth
  • 4 Tbsp Almond Milk unsweetened
  • 2 Tbsp Vegan Butter I use Earth Balance
  • 1/2 tsp Garlic Powder or less
  • Pinch Salt
Instructions
Cauliflower Rice
  1. Rinse the cauliflower and soak up any excess moisture with a towel.
  2. Remove the stalk and cut the cauliflower into quarters.
  3. Use a box grater or food processor (with grater piece) and grate until rice like shapes form.
  4. Add 2 Tbsp to a pan over medium-low heat and allow the olive oil to heat for about one minute.
  5. Add the cauliflower rice to the pan and toss in the remaining ingredients. Saute.
  6. Add the remaining 1 Tbsp of olive oil and mix. Allow to brown on all sides (if desired), and remove from the pan once the desired consistency is reached. (About 10-15 minutes depending on the heat).
Brussels Sprouts
  1. Preheat the oven to 400 degrees.
  2. Cut off the stems of the Brussels sprouts and slice thin. You may peal some of the outer shells off rather than slicing as well.
  3. Place onto a baking sheet and mix with olive oil, turmeric, garlic, garlic powder and salt & pepper.
  4. Once evenly mixed, spread out and cook for 25 minutes or until dark and crispy. Keep in mind that you will be baking the pizza for about 12 minutes, so if you don’t want them to burn, cook for about 18-20 minutes.
  5. Broil for about 5 minutes if you want to speed up the crisping process.
  6. Remove and let cool.
Chickpeas
  1. Preheat oven to 400º
  2. Rinse chickpeas & dry. Option to remove the outer shell of the chickpeas (I leave them on). Add the seasonings to the rinsed chickpeas. Mix until evenly coated. Spread over a lightly sprayed baking sheet and bake for about 30 minutes or until semi crunchy.
  3. Let cool a bit or serve hot (without burning your mouth).
Cheese-less Cheese Sauce
  1. Bring a pot of water to a boil and add the cashews. Boil for 15 minutes.
  2. Strain the cashews.
  3. Immediately add the cashews to a blender with 2 tbsp of vegetable broth and 2 tablespoons of almond milk.
  4. Blend under smooth.
  5. Add in the butter and remaining almond milk and vegetable broth 2 tbsp at a time (you might not use all of it). You want the sauce to be creamy, but not too thick nor too liquid like.

  6. Add in the salt and garlic powder and blend until smooth.
  7. If you are NOT vegan, feel free to add in about 1/3 cup shredded cheddar cheese. 

  8. Add to your harvest bowl and mix!
