Readers: if you haven’t already been to a Hash House a go go location you MUST go! Hash House has a breakfast unlike anything I’ve ever had before and their presentation is outstanding! Typically one pancake wouldn’t sound like enough for one person, but at Hash House the pancakes are as big as the plate – if not bigger! You can easily get two meals out of one order.
During the end of summer, a few friends and I reserved a table (your entire party must be present in order to be seated) at Hash House for a brunch get together. Savory breakfast or brunch is usually my go to order; however, I went out on a limb this time and ordered the French Toast. The french toast was served on thick bread with a hint of banana and the perfect crunch on top. Thanks to Hash House – I’ve got a new recipe in mind!

A fluffy french toast with a hint of banana and vanilla.
- 2 Bananas* ripe and mashed
- 2 Eggs
- 1.5 tsp Pure Vanilla Extract
- 1/2 tsp Cinnamon
- 2 Tbsp Butter for pan + more for multiple batches
- Sprinkle Powdered Sugar for serving
- Syrup for serving
- 1 banana for garnishing (optional)
- 3 Tbsp Unsweetened Almond Milk
- 1 Package Brioche Toast Trader Joe's

Mash the banana with a fork or potato masher until smooth. Add in the vanilla, cinnamon, and almond milk.

Whisk two eggs in a separate bowl.

Pour the banana mixture into the egg bowl and whisk until combined.

Place 1 Tbsp of butter on a skillet and allow to melt.

Once butter is foaming, dip the brioche in the mixture and place on the skillet.

Allow the bottom to golden before flipping.

Remove from skillet once golden brown on each side and top with syrup or toppings of your choice.
*Option to only use 1 mashed banana depending on how much banana flavor you want.
This sounds soooo good! However I wonder since when French Toast is American lol
