Chicken Parm Alla Vodka

Thin moist chicken with the perfect texture.
- 3 thinly sliced chicken breast
- 2 eggs beaten
- 4 cloves garlic minced
- 1 cup Panko bread crumbs or regular
- 1 Tbsp Italian Seasoning
- 1/4 cup freshly grated Parmesan Cheese
- 2 Tbsp dried parsley flakes
- salt & pepper
- 6 slices Provolone cheese

Preheat the oven to 375°

Mix the garlic and beaten eggs until combined. Place the chicken breasts in a Ziploc bag with the egg & garlic mixture and massage until marinated. Place in fridge for 20-30 minutes.

While the chicken is cooling, mix together the panko, Italian seasoning, parsley and salt & pepper. Place on a plate or large flat bowl.

Take the chicken out of the fridge and remove from Ziploc. Cover both sides of the chicken breasts in the Panko mixture until evenly coated. Place all 3 chicken breasts in the oven for 12 minutes – until no longer pink. Remove from oven an distribute the cheese evenly over all 3 chicken breasts. Place back in oven and remove once the cheese has melted.

Top this off with the best homemade vodka sauce you’ll ever taste and a side of rigatoni pasta (this noodle helps capture the reach and creamy sauce)! Don’t forget the garlic bread!
