Guys, I cannot put Chrissy Teigen’s Cravings cookbook down. I’ve never made so many recipes from one single source until I bought Cravings. This “Chili” is packed with flavor and plenty of spice. It’s perfect for a chilly rainy or winter day. My heartburn doesn’t agree with me after this meal, but I can’t stop.

Ingredients
For the Chili
  • 2 Tbsp Olive Oil
  • 1 Red Onion diced
  • 1 Green Bell Pepper diced
  • 1 Jalapeno diced
  • 5 Cloves Garlic minced
  • 2 Tbsp Chili Powder
  • 1 Tbsp Ground Cumin
  • 1/2 tsp Cayenne Pepper
  • Salt & Pepper to taste
  • 4 cups Low-Sodium Vegetable Broth
  • 2 15 oz. cans Diced Tomatoes in Juice
  • 1 15 oz. can Dark Red Kidney Beans
  • 1 15 oz. can Low-Sodium Black Beans
  • 1 cup Brown Rice cooked
For the Tortilla Strips
  • 4-6 Corn Tortillas
  • 1/2 Cup Olive Oil
  • 1/4 tsp Salt
To Top it Off
  • Cilantro Leaves chopped
  • 1/2 Avocado per serving
  • Shredded Cheese
Instructions
  1. Cook the brown rice according to package. 

Chili
  1. In a large pot over medium heat, heat the olive oil and pour in the onion, jalapeno, and green pepper. Stir for 10 minutes or until onions are translucent. 

  2. Stir in the cayenne pepper, chili powder, cumin, and freshly minced garlic. Add salt and pepper to taste and stir for an additional 2 minutes. 

  3. Pour the vegetable broth, tomatoes (in juice), black & kidney beans into the pot and stir until combined. Reduce the heat to medium-low and let simmer for 30 minutes. 

  4. Add the cooked brown rice and stir until chili thickens. 

Tortilla Strips
  1. Preheat oven to 375 degrees. 

  2. Brush all 4-6 tortillas with Olive Oil until fully coated on both sides. Sprinkle salt or seasoning of your choice. Option to add a little lime juice. 

  3. Cute the tortillas into very thin strips.

  4. Spread over lightly sprayed baking sheet and place in over until golden and crispy (about 8-10 minute). Remove from oven and let cool. 

For Serving
  1. Pour the chili into a serving bowl & top with 1/2 avocado, cheese of your choice, and tortilla strips.
