Peanut butter is life, why? Because it just is! I probably go through a jar of Trader Joe’s Organic Crunchy Peanut Butter once a week. It goes well with apples, bananas, PB&J, and celery (I hate celery). It’s even better inside a cookie! As much as I love peanut butter – I usually don’t care at all for peanut butter cookies because I prefer chocolate; however, my dad makes these cookies and dips them in chocolate so it’s changed my opinion on PB cookies 🙂 .
I promise you the hint of dark chocolate will change the way you think about peanut butter desserts. Think about it, chocolate makes everything better! I actually surveyed my followers on instagram asking whether they enjoyed milk or dark chocolate. A majority chose Milk chocolate which surpsised me because I feel as if every time I have a conversation with someone about chocolate (which is more often than I’d like to admit), they typically prefer dark chocolate.

- 2 sticks butter
- 1 cup sugar. divided 1/4 cup for the top of the cookies
- 1 cup brown sugar softened
- 2 eggs
- 1 cup Organic Creamy Peanut Butter
- 1 1/4 cup Flour
- 1 tsp Baking Powder
- 1/2 tsp salt
- 4 blocks 72% Dark Chocolate Cocoa Almond Bark Trader Joe's
- 1 handful milk chocoalte

Preheat oven to 375 degrees.

Mix the wet ingredients together and mix the dry ingredients together.

Slowly fold in the dry ingredients and mix together until evenly mixed (by hand or low speed on mixer).

Roll the dough into tiny balls and dip one side in a bowl of sugar.

Place the dough balls onto a baking sheet and use a glass to gently flatten the cookie a bit (about 1/8 inch).

Take a fork and gently press into the cookie to make marks.

Bake in the oven for about 10 minutes.

Remove from oven and let cool.

Melt the chocolate in the microwave for 30 seconds at a time, stir each time. You can also melt on low heat over the stove in a sauce pan.

Dip part of the cookie into melted chocolate and place on parchment paper to set and cool.
You may freeze these in an air tight container.
