This is hands down my new favorite way to eat pasta salad! I’ve eaten pasta a number of times where I couldn’t decide whether I wanted a simple garlic olive oil sauce or marinara. About 9/10 times I chose marinara and that always ended up being a mistake. The recipe below has become almost a weekly thing; however, I never get sick of the taste!
Banza sells a number of different shaped pasta and the Rotini or Pin Wheels are my favorite shapes to eat with the creamy avocado dressing. The noodles capture the sauce just perfectly. Please be advised that I am NOT affiliated with Banza, but I absolutely love their products and their customer service is spectacular. If you haven’t picked up a box (or 10), I recommend snagging one during your next grocery store visit. I’ve found the products at Target at the cheapest price of $2.08.

A delicious and healthy pasta salad made with avocado, olive oil, parmesan, and plenty of garlic.
- 1 box Banza Pasta
- 1/2 cup Frozen Peas
- 3/4 cup Grape Tomatoes halved
- Parmesan Cheese shredded or grated
- Everything Bagel Seasoning for garnishing
- 1 Avocado
- 1 Tbsp Parsley
- Salt & Pepper to Taste
- 1 tsp Red Pepper Flakes
- 2 Tbsp Olive Oil
- 2 Tbsp Unsweetened Original Almond Milk
- 1/4 cup Freshly Grated Parmesan

Cook the pasta according to the package (I like to do the least amount of time).

Place the frozen peas in a skillet with a little olive oil and cook until defrosted and warm.

Simmer the tomatoes in a skillet with olive oil until slightly shriveled.

Drain the pasta and place back in the pot.

Mash the avocado until no chunks.

Add the rest of the ingredients and stir until incorporated.

Add the sauce to the pasta and stir until the pasta is evenly coated.

Mix in the vegetables and add the cheese.

Top with everything bagel seasoning.
