Honey Crisp Apple Pancakes

Pancakes are one of my favorite comfort foods. I’m not a big breakfast eater unless it’s a weekend. I go all out on the weekends! I’ve made protein Healthy Protein Banana Pancakes, but I wanted to make something more Fall like. That being said, I had honey crisp apples on hand that needed to be used. Honey Crisp Apple Pancakes were the move this past weekend! No regrets people!

When it comes to desserts or fruit, I don’t like mixing the two at all. Don’t get me wrong, while I love the flavor I just don’t like the texture of cooked fruit. Yes, that means I don’t like apple pie. Smells great though!

These Honey Crisp Apple Pancakes have a subtle apple flavor, so it’s not overbearing whatsoever. Rather than topping these pancakes with syrup, I decided to top with peanut butter, honey, and homemade apple butter.

These Honey Crisp Apple Pancakes have a subtle apple flavor and are topped with peanut butter, apple butter, and honey.

Ingredients
Pancake Mixture
  • 1-2 cups Quick Oats blended*
  • 1/2 tsp Cinnamon
  • 1 tsp brown sugar optional
  • 1 tsp Pure Vanilla Extract
  • 1-2 Eggs
  • 1 cup Unsweetened Almond Milk
  • 1 small Honey Crisp Apple puree
  • Honey or Syrup for topping
  • Peanut Butter for topping
  • Butter for cooking
Apple Butter
  • 1 small Honey Crisp Apple puree
  • 1/2 tsp Ground Cinnamon
  • 1 tsp Honey OR Sugar
  • 1 tsp Apple Cider Vinegar
  • 1 tsp Water
Instructions
Apple Butter
  1. Blend all ingredients in a blender until thick and smooth. If you prefer the apple butter warm, add to a small saucepan and cook until warm and thick.
Pancakes
  1. Blend the oats until ground.
  2. Pour into mixing bowl and add the cinnamon, brown sugar, vanilla, eggs, apple and almond milk.
  3. Feel free to add in more oat flour (or flour of choice) to thicken the mixture.
  4. Heat 1 Tbsp butter in a pan and add about 1/3 cup of mixture to the pan.
  5. Flip once bottom is browned and bubbles are forming on top.
  6. Top with ingredients of your choice!
Recipe Notes

*Feel free to use regular pancake mix if you'd like. You may also use regular flour, wheat flour, or gluten free flour. Adjust at the end based on desired consistency.
