Pasta Alla Vodka
Creamy, flavorful, and a hint of spice. This goes SO well with Rigatoni noodles.
- 1 lb Rigatoni Pasta
- 2 Tbsp Olive Oil
- 3 Tbsp Butter divided
- 1 Whole Medium Yellow Onion Chopped
- 4 Cloves Garlic Minced
- 3/4 Cup Vodka
- 1 14 oz Can Tomato Paste
- 1 Cup Heavy Cream
- 1 Tbsp Red Pepper Flakes
- Salt don’t be shy & Pepper to taste
- 1 Cup Freshly Grated Parmesan Cheese
While sauce is cooking, prepare the pasta according to the package.
Melt 2 Tbsp of butter and olive oil in a large pot over medium heat. Once melted, add the onion and garlic (garlic burns easily so lower the heat and watch carefully). Lower the heat to medium-low and stir the garlic & onion. Let simmer for 2 minutes (again, pay attention to the garlic). Pour in the vodka and add some salt (I like to add a little salt as I cook…tasting as I go). Cook for 3 minutes. Add the can of tomato paste or pure and stir. Once combined, reduce to low heat. Stir in the heavy cream and stir. Add the red pepper flakes, salt, and pepper. Stir to combine. Add 1 last tbsp of butter … just because. Lastly, I like to slowly stir in about 1/4 cup of Parmesan (optional).
Pour this mixture over a bowl or rigatoni pasta (or pasta of your choosing), top with more Parmesan, and add a healthy spoonful to the top of the Chicken Parm.
