Lemon Blueberry Oat Donuts

Lemon blueberry donuts, cookies, or sweets always remind me of summer. It’s a light and refreshing taste that, despite all the sugar, seems healthier than chocolate desserts. I used oat flour for these lemon blueberry donuts, similar to my banana bread donuts, and they came out with a perfect texture. Now, these donuts are not as heavy as cake or bakery donuts, but they will still do the trick.

Feel free to use less lemon or blueberry based on your personal preference.

Ingredients
Dry Ingredients for Donuts
  • 1 3/4 Cups Oat Flour Pulse in a food processor
  • 1/4 tsp Baking Soda
  • 1 1/2 tsp Baking Powder
  • 1/4 cup Sugar
  • 1/4 tsp Salt
Wet Ingredients for Donuts
  • 1/2 cup blueberries
  • 1/3 cup lemon juice
  • 1/4 cup Pure Honey
  • 1 tsp Pure Vanilla Extract
  • 1/4 cup Unsweetened Apple Sauce
  • 2 Tbsp Unsweetened Almond Milk
  • 2 Eggs
Frosting
  • 2 cups Powdered Sugar
  • 1/4 cup Unsweetened Almond Milk
  • 1 tsp Pure Vanilla Extract
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix all of the dry ingredients together & mix the wet ingredients together. Slowly fold in the wet ingredients into the dry ingredients and mix on low speed or with spoon.
  3. Carefully pour the batter into the donut holes and bake for about 10-12 minutes (until toothpick comes out clean).
  4. Remove from oven, let cool, and then dip in the glazed frosting
  5. Frosting
  6. Whisk all ingredients together until smooth.
