Pumpkin oatmeal for the win today! My typical lunch is oatmeal with apples or bananas, but I decided to switch things up today with being Fall and all.
During the summer, bananas and peanut butter were my go to ingredients for my oatmeal; however, I got sick of that after a couple of months. I then switched to honey crisp apples and peanut butter and i’m not sick of that combo yet!
The funniest thing about oatmeal is that I used to HATE it. The texture freaked me out, it seemed bland, and I never wanted to eat oatmeal packets that were packed with sugar – it just defeated the healthy purpose.
Gus does such a great job while I’m food styling! He’s totally interested in the smells, but he never tries to jump up and ruin everything. We are so lucky to have such a great retriever.
Pumpkin Oatmeal with almond butter, vanilla, cinnamon, and honey.
- 1/2 cup Old Fashioned Rolled Oats
- 1 1/4 cup Unsweetened Almond Milk
- 2 Tbsp Almond Butter
- 1 Tbsp + 1 tsp Pumpkin Puree
- 1 Tbsp Honey or Maple Syrup
- 1/2 tsp Cinnamon more if desired
Boil the almond milk (or water/milk of your choice).
Add the oats and cinnamon and stir for a minute or so.
Add in the vanilla, pumpkin Puree, and honey.
Once the water is mostly absorbed (but not completely), stir in the almond butter.
Add more cinnamon and honey if desired.
Remove, let cool a bit, and enjoy!
