It’s summer and there’s no better time for a refreshing salad with some of the most ripe fruits and vegetables! That being said, I had a bag of quinoa that I wanted to finish up and a few ripe peaches that were ready to be eaten!
This Quinoa Peach Summer Salad is packed with fruit and vegetables on top of tons of flavor.
- 1/2 cup Quinoa
- 1 cup Bone Broth or vegetable/chicken broth
- 1 Bell Pepper sliced
- 1/2 Red Onion finely diecd
- 1 Avocado diced or cubed
- 1 Zucchini sliced
- 1 Peach sliced
- Olive Oil for sauteing
- Everything bagel seasoning
- Queso Fresco or cheese of your choice
Cook the quinoa according to the package with one cup of bone/vegetable broth. (This helps add flavor to the quinoa while packing it with nutrition)!
Heat about 1-2 Tbsp of olive oil on a skillet and add the sliced zucchini. Cook on medium low heat until golden on each side.
Do the same for the peaches (with less olive oil). You can use butter if you'd rather cook the peaches without olive oil.
Once the quinoa is done, place the quinoa in a salad bowl and top with onion, zucchini, bell peppers, avocado, peaches, and everything bagel seasoning (or salt & pepper if that's all you have on hand).
Add queso fresco or a cheese of your choice.
Mix together and enjoy!
