Just liked shaped mac ‘n cheese, cookies are better when they’re in cute little shapes! My dad never misses a holiday when it comes to cookies and his St. Patty’s day cookies are always my one of my favorites. They’re green, covered in chocolate, and photograph well. If you’re not a fan of mint feel free to leave out the mint extract. Test out these shortbread cookies and don’t forget to dip them in chocolate!
A classic shortbread cookie with a touch of dark chocolate and mint.
- 2 sticks Butter
- 1 cup Powdered Sugar
- 2 cups All purpse Flour
- Dark Chocolate Almond Bark
- 1 handfuls Milk Chocolate
- 1/2 tsp Mint Extract
- Drops Green food coloring
Mix together the ingredients until a smooth dough is formed.
Roll the dough out over a floured surface to a thickness of your choice.
Use a cookie cutter to cut out shapes (rolling the scraps at the end for additional cookies).
Place on baking sheet and bake for 10 minutes at 350 degrees. You may need to leave in a longer - just be sure to watch so they don't burn.
Let cool and while cooking, melt the dark chocolate almond bark in the microwave.
Dip the cookies in the chocolate and drizzle more for garnishing.
