A savory tuna salad with a Southwestern Chipotle (LOL something about parents not being able to pronounce Chipotle correct always gives me a good laugh) twist. My aunt inspired me to make this recipe that she randomly tossed together one day. The mixed this with an Italian dressing rather than the Southwestern Chipotle dressing I used. As many of you may know, I don’t eat meat or fish; however, Jeff gave this a taste test and said he would eat it over and over again!

Savory tuna salad with a Southwestern twist.
- 2 12 oz Cans Albacore Tuna in water
- 1 Jalapeno diced
- 1 Small Red Onion diced
- 1 Red Bell Pepper diced
- Juice of 1/2 lemon or lime
- Hidden Valley Southwestern Chipotle Dressing
- Salt & Pepper to taste
- 4 Cups Spinach
Drain the water from the cans of Tuna and pour tuna into a bowl.
Add the chopped ingredients to the tuna and mix until evenly distributed.
Add the spinach, dressing, and lemon. Toss until mixed.
