Spinach & Kale Chicken Caesar Wrap

I’ve taken one of my favorite salads and turned it into a wrap with a kale twist. It’s a simple recipe with perfectly grilled lemon pepper chicken and a light Caesar dressing.

Ingredients
Chicken & Wrap
  • 1 Bag Kale or lettuce of your choice*
  • 1 lb Chicken Strips
  • 1 tsp Lemon Pepper seasoning Trader Joe's
  • 1 tsp Salt
  • Spinach Wraps depends how many you're making
Dressing
  • 3 small cloves Garlic peeled or less for less spice
  • 1 tsp Salt
  • 1/4 cup Blue Cheese
  • 1/4 cup Freshly Grated Parmesan + more for salad
  • 1 tsp Dry Mustard
  • 1 Tbsp Red Wine Vinegar
  • 1 tsp Worcestershire Sauce
  • 1/2 Fresh Lemon Squeezed
  • 3 Tbsp Olive Oil
  • 2 Eggs option to just add more oil instead of eggs
  • 1/2 tsp Pepper
Croutons
  • 1 Whole Grain Baguette ripped into bite size pieces
  • 1/4 cup Olive Oil
  • 1/4 cup Freshly Shredded Parmesan
  • 4 cloves Garlic minced
  • Salt & Pepper to taste
Instructions
Dressing
  1. Toss all ingredients (except for the blue cheese & Parmesan) into a food processor and pulse until little to no chunks are left.
  2. Add in the blue cheese & Parmesan and pulse until desired consistency.
Croutons
  1. Preheat the oven to 350 degrees.
  2. Rip apart the baguette into bite size crouton pieces and place into a large mixing bowl.
  3. Mix together the olive oil, parmesan, garlic, and salt & pepper.
  4. Pour the mixture over bread and mix until evenly coated.
  5. Place on baking sheet and bake for 10 minutes at 350 degrees.
Wrap
  1. Season the chicken with lemon pepper, salt, and a little olive oil and cook on skillet over medium-low heat until fully cooked. Remove from heat and set aside.
  2. Wash the kale and remove all stems(if not already pre-washed) Pour the dressing over the kale. Massage the kale until dressing incorporated into kale.
  3. Place the massaged dressed kale on the wrap and top with chicken, homemade croutons, extra dressing, and Parmesan.
  4. Wrap into burrito/wrap form, cut in half, and enjoy!
Recipe Notes

*Romaine is currently being recalled for Ecoli so we opted for Kale this time. 

Also, you may use as little or as much kale as you want. If you're buying bagged kale you'll get A LOT of kale.
