I’ve made a recipe with similar ingredients multiple times, but I wanted to add a twist to my hash brown cups this time! They’re flavorful, crispy, and filling all at the same time. These little cups would be perfect if you’re entertaining for a brunch or shower. Plus – they’re cute!!

Hash browns in a spiral form that forms a little bowl for the eggs.

Ingredients
- 5-6 small Idaho Potatoes spiralized
- 2 Tbsp Olive Oil
- 2 Tbsp Butter Melted
- 4 Cloves Garlic minced
- Garlic Salt & Pepper to taste
- 5-6 Eggs over easy or as desired
Instructions

Preheat the oven to 400 degrees.

Keep the skin on the potatoes and spiralize in a spiralizer using the thicker cut blade.

Place carefully in a bowl and pour in the olive oil, butter, garlic, and salt & pepper. Mix carefully (to avoid breaking the strands).

Once coated, take a few long potatoes and wrap around four of your fingers to create a bowl like shape.

Place the bowls on a sprayed baking sheet and bake for 30-35 minutes. Broil on low to make them golden brown and crispy.

Remove from oven and set aside.

Cook your eggs as desired and place in the center of the hash brown bowl.

Top with avocado, vegetables, or salsas and enjoy!
