A PB&J with cashew butter, strawberry spread, and a waffle as the bread.

  • 1 cup pancake mix I use Kodiak
  • 1 Tsp Vanilla
  • Dash Ground Cinnamon
  • 4 Tbsp Cashew Butter I use Trader Joe's
  • 3 Tbsp Strawberry Spread I use Trader Joe's
  1. Preheat your waffle maker to medium heat & spray with cooking spray.
  2. Prepare your waffle mix according to your box's directions. Add vanilla and ground cinnamon to the mix.
  3. Pour the mixture into your waffle maker (about 3/4 full per each section).
  4. Cook for about 4-5 minutes.
  5. Remove and separate waffle into 4 pieces.
  6. Spread the cashew butter on one side and the strawberry spread on the other.*
  7. Place waffles together and enjoy just like a sandwich.
Recipe Notes

*Option to create your own cashew butter (which I did). Use about 1 cup or so of raw cashews. Roast in oven at 275 degrees for about 12 minutes. Remove and carefully place in food processor. Pulse until the cashews are now in a spreadable form.
