A soft and chewy (with a little crunch) sugar cookie coated in sugar and strawberry glaze frosting.

  • 2 Sticks Butter softened
  • 1 cup Vegetable Oil
  • 1 cup Sugar + more for the dough balls
  • 1 cup Powdered Sugar
  • 4 cups Flour all purpose
  • 1 tsp Vanilla
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 1 tsp Cream of Tartar
  • 2 Eggs
  • 1 cup Powdered Sugar
  • 2 Spoonfuls Strawberry Spread/Jam Trader Joe's
  • 1 tsp Vanilla
  • 2.5-3 Tbsp Unsweetened Almond Milk
  1. Preheat the oven to 375 degrees.
  2. Mix the wet ingredients together and then the dry ingredients together in separate bowls.
  3. Slowly fold in the wet ingredients to the dry ingredients on low speed (or with spatula) until well incorporated.
  4. Roll the dough into a small balls and place in a bowl with sugar to coat one side.
  5. Place dough balls sugar side up on a baking sheet and use a glass to lightly press down (just a tad so they're in a flat circular shape but not too flat as they will automatically bake down).
  6. Bake for 10-12 minutes (I like baking for about 10 to achieve a softer cookie).
  7. Remove and let cool.
  8. Meanwhile, mix the powdered sugar, almond milk, vanilla, and strawberry spread in a bowl.
  9. Once cool, drizzle frosting over cookies (optional).
